Thanks for the Potatoes!

Fourth of July to me means Potato Salad. It’s like Turkey on Thanksgiving. It is part of the tradition of the holiday.
A couple of things with potato salad that we all know – most recipes use mayo and if the potato salad is left out in the heat too long it can go bad. Most cooks will agree that unrefrigerated potato salad should be out less than 2 hours. (Of course less is better) Even coolers with ice can help but if there are any doubts you have to toss it out.
The next best thing to potato salad on the 4th of July is potato salad on the 5th of July. I love leftover potato salad – nice and cold right out of the fridge. But again most cooks we consulted agreed that you should devour or toss it out after 2 to 3 days in the fridge.
Finally, if you are going to a big potluck type event consider those with allergies. You may want to make a cute little recipe card to have by your potato salad. Nuts (not usually found in potato salad) and eggs (often found in potato salad) are two very common food allergies. But there are many more.

Dannette: potatoes, bacon, cucumber, hard boiled eggs, celery, black olives, yellow mustard, and miracle whip sometimes I even put shredded cheese on top
Sarah: Here’s a recipe for German potato salad that I made for Easter. It turned out really good, but next time I’ll sprinkle some extra bacon on top so it’s really crunchy and good at the end

Jamie: I use sour cream and vinegar instead of mayo..this is especilally good if your kids have an egg allergy.
